Bacon Parmesan Meatloaf

Meatloaf is an easy standby family favorite, but it gets boring after awhile.  So in an effort to keep it in the meal rotation but make it new I wanted to introduce some new flavors. A couple of tries that didn’t quite hit the mark and I found one that the whole family loved.  A slightly crunchy crust on top and plenty of moist flavor inside.  It is pretty enough to serve to weekend company and, trust me, meatloaf is hard to make pretty.  The key is to use your hands to mix all the flavors up well, and to use these as fresh ingredients- parmesan cheese, garlic, and bacon (no bacon bits here)!!

Bacon Parmesan Meatloaf


  • 1 ½ lbs ground beef
  • ½ lb ground chicken or pork
  • ½ cup ketchup
  • 1 Tbsp. Worcestershire
  • 2 cloves garlic, crushed
  • ⅔ cup plain bread crumbs
  • ⅓ cup grated parmesan cheese
  • ½ cup bacon, diced
  • 2 eggs
  • salt and pepper to taste
  • Topping:
  • Ketchup
  • Parmesan
  • Bacon
  • Brown Sugar


  1. Preheat oven to 350°
  2. In a large bowl combine all ingredients and mix well, use your hands- get in there and mix it until everything is thoroughly combined.
  3. Line the bottom of your loaf pan with bread ( this absorbs a lot of the grease and keeps the bottom 1” from staying soggy.
  4. Form your meat into a long oblong loaf shape.
  5. Rub a generous amount of ketchup all over the top.
  6. Sprinkle with brown sugar, Parmesan cheese, and additional bacon on top- this creates a light crust.
  7. Bake for 45 minutes to an hour until top is crusted lightly, and cooked all the way through.
  8. Let stand for 10 minutes before slicing and serving.
