Simple, Elegant Brunch with Nespresso

Its Mothers’ Day this weekend and its easy to make Mom feel pampered and honored.  Even if you’re not a gourmet chef – or even a good cook – we have an easy, simple brunch that anyone can do!  Don’t be intimidated by fancy soufflés and complicated baked goods. Brunch is one of the easiest menus to host!! This is a super simple menu that features fresh food and bakery pastries – and the only thing I cooked was the scrambled eggs! And if your mom is a coffee lover, like mine is, you can make her day extra special with !

COFFEE:

Kick it up a notch and go beyond regular coffee. Try , the revolutionary system which brews both an American style large-cup coffee topped with a silky and generous crema as well as an authentic espresso all at the touch of a button.  Its so easy to have the best coffee you’ve ever had at home.  (For a true luxurious experience, pour your milk in your cup first, then brew your VentuoLine coffee over it. HEAVEN IN A CUP.) Just set up your machine and its so simple to use, guests can choose their own coffee and make their own! My guests were absolutely amazed!! They couldn’t believe that you could have real coffee shop coffee at home for a fraction of the cost! (VertuoLine pods run about 95¢ as opposed to we over $3 at a coffee shop!) 

Just a warning: once you go VertuoLine, you can’t go back! It’s THAT good. Your regular coffee will not hold a candle to this smooth… and that crema!  Now Nespresso VertuoLine is $299, which is pricier than some other machines, but with this fabulous retro styling and well-known Nespresso quality, its worth it!

MENU:

There’s no need to go all fancy or try to make omelets for a crowd (which never works well). A simple menu filled with fresh berries, pastries and simple scrambled eggs prettied up is all you need! The eggs are so simple – just drizzle the asparagus with olive oil, sat and pepper and roast at 400º for about 15-20 minutes. Then scramble some eggs and voilá!

SHOPPING LIST

  • 1 dozen eggs
  • 2 lb asparagus
  • fresh mint
  • blueberries and blackberries
  • strawberries
  • mixed greens
  • balsamic vinaigrette dressing
  • a few pre-made pastries (we went with cinnamon sticks)
  • champagne (the more the better!)
  • orange juice
  • Nespresso VertuoLine coffee (available in the Nespresso store)

DECOR

I chose simple, springy decor. Just white dishes with white napkins. But I dressed it up with crystal and silver. I picked up these gorgeous flowers at the farmers market (and added a little stem to every plate to dress it up.)
